The butterfly chops were really good, and I think the grape leaves gave them a nice flavor.&lt;/P&gt;&lt;P&gt;SO....I made several packs from the unfinished-cooking meat, wrapping them in foil and leaving them in the oven at 350 for about an hour and giving them to everyone after the Q and A, in something of an island tradition.&lt;/P&gt;&lt;P&gt;What I should have done was get the fire going about an hour sooner and let a larger amount of coals build up. I really did like the grape leaves, though. I thought that was a great thing to have that you could substitute for other large leaves.&lt;/P&gt;&lt;P&gt;Oh, and the taro on the bottom was really good, a lot of people got to try those. Today I made a pit fire, or earth oven, as they are called on Wikipedia. We don't really do these here, I guess the closest thing to this in America&amp;nbsp;would be a clambake, something about which I would venture to say that&amp;nbsp;nobody reading this has ever been to.&lt;/P&gt;&lt;P&gt;Actually, I've made two of these particular type fires today. The first was a small test fire in my backyard. I just finished&amp;nbsp;eating/ sampling a little of it. The first one wasn't probably done quite right, b/c I didn't get it sealed off the way it should be, b/c it started RAINING on me.&amp;nbsp;But, I was pretty happy with the way it turned out, the potatoes were cooked almost all the way through, and the pork riblets not to terribly dry.&lt;/P&gt;&lt;P&gt;This is all for a missions convention my church is having this weekend. The main obstacle to doing this type of fire is materials--you need volcanic rock. The missionary&amp;nbsp;that's coming told me when I called him that&amp;nbsp;his was the main&amp;nbsp;difficulty, and&amp;nbsp;then mentioned that there was a place in town that had 'landscape rock.' I,&amp;nbsp;in my&amp;nbsp;extensive and trivial knowledge of many unimportant things such as all forms of rocks, rejected this idea,&amp;nbsp;being familiar with the rocks he was talking about.&amp;nbsp;Pumice. As you may well know, pumice is formed from the bubbles atop the lava, or something like that.&amp;nbsp;They are very light and some of them will even float. They have very little heat&amp;nbsp;retention.&amp;nbsp;&lt;/P&gt;&lt;P&gt;After pondering the possibility of even doing this, I suddenly realized that I did, in fact have a source of igneous stone. We install granite counters for a granite shop, and they have an abundance of decent-sized scraps of granite, several of which I picked up this morning.&lt;/P&gt;&lt;P&gt;Anyway, the second fire is looking pretty good so far. I was able to gather quite a lot of wild grape leaves behind the church to line the hole, covering the granite slabs, some of which were literally red-hot. I've never seen&amp;nbsp;a&amp;nbsp;rock&amp;nbsp;actually glowing red like that, pretty awesome.
